To make my spice kale and bean stew start by preparing your kale you just want to remove any stems as they can be too tough to chew

When ready to cook heat your oil in a large lidded saucepan over a low heat and then fry the onions for about six to eight minutes stirring often

Next add in your garlic, your turmeric, cumin and cinnamon, pinch of cayenne salt and pepper and you want to stir fry this for about one minute

Next, add in your tomato puree, your stock and stir it in well

Increase the heat to high, add your bay leaf, sweet potatoes and two types of white beans

Then give it all a good stir, bring to the boil, cover and reduce heat to a simmer and cook for 10 minutes

Then remove the lid, give it a good stir and top with your kale in an even layer

Recover and cook for a further 10 minutes. After that time, remove the lid, give it another stir, recover and cook for a final five minutes
