Lamb Meatballs with Shirazi Salad

Grilled Persian style lamb meatballs paired with a stunning Shirazi salad that can be served with flatbread or rice makes the perfect summer’s eve dinner.

To make my lamb meatballs with Shirazi salad we're going to start by making the salad so

it has time to marinate. So you're going to take a whole cucumber and slice it down the

middle then take a teaspoon and we're going to use that to take out all the watery seeds

and just discard those once you're done. Then working lengthways again we're going to slice

the cucumber into thin strips and then cut these into small dices. Next we're going to

finely chop half a red onion then we're going to move on to the tomatoes. With these we're

going to quarter and then we're going to cut those quarters in half. Then we're going to

finely chop the parsley and the coriander or mint if you're using and then we're ready

to compile the salad. Into a large bowl we're going to add the cucumber, tomatoes, red onion

parsley, coriander or mint, the lime juice and your salt and pepper. Then we're just going to

toss that really really well together and then cover that and refrigerate for at least 20 minutes

You want it all to marinate in that lime juice. Now it's time to move on to the meatballs. So

you're going to start with putting two onions into your mini food chopper or grate them. Either

way you want them really nice and fine so they cook through properly and soften in the meatballs

If you're using a mini food chopper just whiz until very finely chopped. Then you're going to

want to put your lamb mince into a large mixing bowl along with the onion, your salt and pepper

and then using your hands you're just going to work it all together until it's really really

well mixed. Now using the lamb mixture you're going to make your meatballs about an inch and

a half wide and you'll probably get about 22-23 meatballs from it. Then just add them straight to

your baking tray. I like to use a rack so all the fat drains away. Oh I did forget though to spray

it with oil, either spray or brush it with oil so they don't stick. Then pop them under your grill

or broiler set to high and cook for eight minutes. Then turn them over and cook for a further seven

to eight minutes until they've got a lovely char all around
