This cheat’s quick & easy Eton Mess with ready made meringue, shop-bought strawberry sauce, whipped cream and fresh berries is the perfect summer dessert to whip up when you’re in a hurry.
In a large bowl, beat the whipping cream on high until it forms thick soft peaks.
Add in the meringue nests, breaking them up into pieces as you go. Add in the strawberry syrup. Using a large metal spoon fold the mixture until well combined.
Next, add the berries to a medium mixing bowl and add the strawberry syrup and fold it through. If you want to decorate the Eton Mess you can reserve some strawberries and raspberries first.
Fold the berries and sauce mix through the cream and meringue gently until it’s running through nicely, NOT completely combined, so there are some patches of cream and meringue with no berry mix. Transfer to a individual dessert bowls or one large serving dish. You can decorate with the reserved berries and mint sprigs if you like. Serve immediately*.

*It’s fine to eat the leftovers for the next 2 days, BUT they will go very sloppy and so I don’t recommend it. Instead, put leftovers into a smaller bowl, cover with clingfilm and then foil and freeze! Alternatively store it in an air-tight food container. It will make a lovely frozen dessert. Depending how much you freeze, you’ll need to take it out 10-25 minutes before ready to eat to soften a little.
