To make my chocolate marshmallow English pancakes we're going to start by prepping the wet ingredients first

So measure out your milk, your cold water and your eggs into a large measuring jug and set aside

Then add your flour and a pinch of salt to a large mixing bowl and make a well in the centre

Next melt your butter in the microwave for 20 to 25 seconds

In the meantime, pour your wet ingredients into the well, followed by the melted butter when it's done

Immediately whisk the batter on a low setting until well combined. Then move on to making the chocolate marshmallow gomache

So grab a medium mixing bowl, add your chocolate, your marshmallows and drizzle over the double cream

Then transfer it to the microwave and heat for one minute. Take it out, give it a really good stir, and then you're just going to keep

heating it in the microwave in 20 to 30 second bursts, stirring well after each one

until the marshmallows are totally melted and you've got a lovely smooth ganache

Now it's time for the pancake. So heat a medium pan over a large burner on a medium low heat

for about two minutes, get the pan nice and hot, then add a ladle or just under a ladle full of

batter, swirl the pan around straight away to get a nice circular covering and then cook that

for about one minute 30 seconds to 1 minute 45 seconds, flip it, then cook the second side for about

and spread that all over up to the edges and then fold in half and then fold again in quarter
