To make my thyme roast chicken we're going to start by making a thyme butter to go under the

chicken skin. All you need is fresh thyme, salted butter, salt and black pepper. Then carefully using

a spoon separate the skin from the flesh over the chicken breasts and the legs. Next add in your

butter and use your fingers to spread it out evenly. Then breast side up, baste the chicken

all over with a little olive oil and cover with a layer of streaky bacon. Add some chicken stock to

the pan to help keep it juicy and you'll also want to baste your chicken halfway through roasting
