This Spinach & Fruit Salad with honey mustard dressing is studded with berries and grapes, homemade brioche croutons & sprinkled with cheese.

To make the best ever strawberry spinach salad you're going to start by making

your brioche croutons. For this you need half loaf of brioche which we're then

going to cut into about half inch cubes. The best way to do that is to lie the

loaf on its side and cut half inch slices then just stack them back up

together and make half inch slices again so you've now got like finger sized

strips and then you're just gonna slice those horizontally into cubes. Then

transfer the cubes to a baking tray and drizzle with the oil, toss really well

and level out. Transfer to the oven and bake at 180 Celsius or 350 Fahrenheit

for about 9 to 10 minutes until they are deep golden and crispy all over. You can

of course make these croutons much earlier in the day. Next we're gonna make

the honey mustard dressing. We're gonna combine the extra virgin olive oil, the

white wine vinegar, your honey, your Dijon mustard and a little salt and pepper to

taste and then we're just gonna whisk it up really well until it's lovely and

combined, smooth and glossy. Next we're gonna chop up our walnuts. You can either

do that by putting them in a resealable bag and bashing them with a meat mallet

or rolling pin or you can use a mini food chopper. Just do short sharp pulses
