Cut the ends of the cucumber off at roughly 2 inches from the end. Then stand the ends upright on the chopping board, flat side down and cut into roughly 3mm slices. Then lay them flat side by side on the board. Use the slightly smaller straw to pierce holes in near the top end of the cucumber slices for eyes, and the slightly larger straw to make a hole for the mouth. See the video above to watch me do it. If you make these in advance, store them in a small food storage container covered in cold water and chill.
THE MARSHMALLOW GHOSTS
Just draw on two oval shaped eyes and then an oval or scream style mouth thats a bit bigger than the eyes.
GRAPE EYEBALLS
Slice a handful of grapes in half horizontally. And put them on a plate cut side down. Break up the white chocolate into a bowl and microwave in 20 second bursts, stirring after each one until almost fully melted. Then stir until fully melted. Spoon the melted chocolate into your piping bag. Snip off the very tip of the bag, about 2 mm up. You only want a small hole so you can control the chocolate coming out. Then pipe a decent dot of chocolate onto the middle of a grape half. Add an edible eye. Carry on until you have done the amount of grapes you need. Remember to do a mix of different size eyes. Chill the grapes in the fridge for half an hour before serving to set the chocolate and eyes in place.
Notes
If using straws, you’ll need hard paper or plastic ones, NOT silicone ones. If using piping nozzles, use the smaller ends the icing would come out of.
Baby & Toddler
Only the cucumber ghosts are suitable for babies under 12 months.
