4 ingredient, no added sugar, freezer friendly, and ready in less than 20 minutes, these Air Fryer Banana Cookies can be enjoyed for breakfast or snack.
80gself raising flour OR 40g (¼ cup) SR flour + 45g (¼ cup) almond flour
50gdark chocolate chips

Instructions
Add the mashed banana and peanut butter to a mixing bowl. Stir until well combined using a balloon whisk.
Stir through the flour using a metal spoon to make a thick dough like consistency. If you are using a mix of almond flour and plain flour, the mixture will be looser and a bit more like cake batter which is fine.
Stir in the chocolate chips.
Ideally using a medium ice cream scoop, put spoonfuls of the mixture in your lined air fryer basket, leaving a little space in between each one (they won’t spread out much). If you have a large air fryer you should be able to fit all 8 cookies (if you have extra batter, you might get 9 cookies and have to bake that last one separately). If you have a smaller air fryer, you will have to bake the cookies in two batches.
Air fry on 160°C for 11 minutes or until the bottom looks cooked. If using almond flour, cook for 13-14 mins (also makes 9 cookies).

Suitable for toddlers, once you allow them to have chocolate.
STORAGE
Store leftovers in an air-tight container or resealable food bag at room temperature for up to 3 days (cook day + 2). As these are best served warm, you can just reheat them in the microwave for 10 seconds to warm them through a little before enjoying. Alternatively, reheat air fryer on 160 for 4 mins. Leftovers can also be frozen, and even reheated in the microwave from frozen. To give you an idea of how long, I use the defrost setting on my microwave for 100g in weight for two of these cookies, and 200g in weight for 4. Thats just 1-2 minutes on defrost.
