This Cherry Lime Refresher has the right balance of sweet, fruity & tangy. You’ll make a cherry lime syrup, then add it along with lime slices to sparkling water on ice.

Instructions
Add the cherries, water and sugar to a medium pan, heat over medium heat until simmering. Continue to cook for 5 minutes.
Remove from the heat and stir through the lime juice. Leave to cool off for around 30 mins, then blend the syrup until smooth, you can either use a stick blender in the pan or transfer to a regular blender. At this point if you don’t like pulp, strain the cherry mixture over a large jug gradually. Once completely cooled, store in an air-tight jug or carafe and keep refrigerated for 2-3 weeks. This recipe will make around 1 litre of syrup.
TO SERVE
Add ice and the 3 lime slices per glass followed by the sparkling water, then the cherry lime syrup, using a 2:1 ratio as a guide. So I usually add 200ml sparkling water followed by 100ml syrup.
Notes
If you can’t use lime slices, add bottled lime juice to taste when serving.
