Add the cornflour to a casserole pot or oven proof dish that just fits them. Add the cornflour and pour on a little of the stock, mix into a paste. Then add the rest of the stock and all other sauce ingredients. Stir well using a hand whisk.
Add the chicken thighs and turn them around to coat in the sauce. You can do this up to 1 hour before ready to cook if you like to marinate at room temperature.
Bake for 45 minutes for bone-in, 35 for boneless, adding the lemon slices if you fancy 10 minutes before serving (see notes). Once done, if sauce isn’t coating the thighs, turn them around in it before dishing up.
SLOW COOKER

Nestle in the chicken and cover. Cover and cook on low for 4-5 hours (boneless, I’d go for 4 hours bone-in, 5). if you’d like to add lemon slices, add in for the last half an hour, just lying them on the top of the chicken.
Notes
Adding lemon slices - doing this is really just for aesthetics, so good for serving to guests. If you add the lemon slices before you start cooking, you could end up with an overpowering bitter lemon flavour, particularly if you are slow cooking.Checking the chicken is cooked - internal temp should reach a minimum of 74ºc/165ºf or juices run clear.
Baby & Toddler
Suitable for 12 months+ can use only reduced salt soy so replace the dark soy for reduced salt. Can also use low-salt stock, and don’t add any salt into the cook. Cut the chicken into small bite-size pieces.
FUSSY EATERS
If yours is funny with the soft texture slow cooked chicken has, oven bake instead. If your picky eater is funny with sauces, dish up without sauce and give them a little in a dish to add as they please.
