Fruity and smokey, these Mango & Lime Chicken Skewers pair perfectly with a super simple Sriracha mayo that even the kids will love. They can also be cooked in the air-fryer as well as the barbecue.
Add the marinade ingredients to your blender pot and whizz until smooth. Add the marinade to bowl along with the chicken chunks and toss well to coat. Cover and refrigerate for at least 1 hour, ideally 5-6 hours. In the meantime, make your Srircha mayo by simply mixing the two together.
Remove the chicken from the fridge about 30 minutes before ready to thread onto your skewers. If you are using wooden skewers, soak them in water for 30 minutes. Then add the chicken and peppers to the skewers, alternating between the two as you go.
TO BARBECUE
BARBECUE on an oiled grill until cooked through with a nice char on the outside. Baste with the marinade halfway through, then discard (because of raw juices). If using a GAS barbecue cook on low with hood down in-between turning. Cook for around 20 minutes, turning 3-4 times. If using a smoker also, go for a sweet wood or fruity flavour. See notes for barbecuing tips.
TO AIR FRY
Cook at 200ºc / 400ºf for 7 minutes, then turn the skewers over and cook for a further 5-7 minutes, until they have a nice char and the chicken is cooked through.
TO OVEN COOK
Preheat the oven to 230ºc/210ºc fan/450ºf/gas 8. Lay the skewers on a large oven tray / sheet pan lined with foil. Bake for 15 minutes or until cooked through. If you want to char them a little, finish them off under the oven grill / broiler set to high for about 30-60 seconds each side.

BARBECUING TIPSThe coals are hot enough to add the chicken skewers when a medium layer of ash coats them. Don’t turn the skewers until they have been on the grill for 3 minutes (the chicken is likely to stick).BABY & TODDLERFor under 12 months use agave instead of honey. Leave the chilli and salt out of the marinade or marinade their chicken separately. Whizz up the marinade first with no chilli or salt, take a spoonful for little one’s chicken and toss through in a separate bowl.BABY-LED WEANINGSlice the chicken finger-width size and once marinated, add to the skewer vertically (see post above, Baby section). Slice pepper finger width also and add onto skewer horizontally. To serve, slice the chicken into finger size strips. Pepper can be given as is.SPOON FEEDING6 MONTHS Roughly chop and transfer to your stick blender pot along with some warm boiled water (can add a little rice too). Whizz until puréed.7-9 MONTHS Roughly chop and transfer to your mini-chopper along with a little low-salt chicken stock (and rice if serving). Pulse slowly until finely chopped.10-12 MONTHS roughly chop and add to your food chopper, pulse just a few times and check consistency, should be lumpy (but no large lumps). Add a little low salt stock if needed. Can be stirred through a little rice.12 MONTH + TRANSITIONING PERIOD Shred the chicken pieces using forks and cut the pepper into small, pea-sized pieces.TODDLERS chop chicken and pepper into bite-size pieces.
