To make my easy crispy smashed potatoes I first smash open three garlic cloves just

so they burst open a little and their flavour can come out and infuse the potatoes

Then I add medium and smaller potatoes to a large roasting pan and drizzle over the

oil and then some salt. I then toss the potatoes well and arrange them with a good size gap in between each one

They will need plenty of space when you smash them open. Then nestle in three sprigs of rosemary and then the garlic

Transfer to the oven and roast for 35 minutes then remove and turn the potatoes over

Using a potato masher carefully press down on each one until they burst at the sides

Next put a little knob of butter on each potato, return to the oven and roast for a
