Preheat the grill or broiler on high. Toast the pitta’s until just crispy (for me that’s setting 2 ½). Then put the pitta breads on an extra large baking tray/sheet pan or two smaller ones.
For each pitta, spread on an even layer of BBQ sauce using a silicone brush. Then add on a generous amount of the onion (don’t need to separate the slices), followed by the peppers, in an even layer, not over crowding the toppings.
Grill/broil on high for 2 - 5 minutes, keeping a close eye on the pitta’s, until the cheese around the edges has gone deep golden. If using two trays, repeat with the second. Serve whole or cut in half or thirds.

Suitable from 12 months + Finely dice the peppers and onion for their pitta pizza. Slice the pitta’s into finger-size strips.
YOUNGER CHILDREN & FUSSY EATERS
Can swap onions or peppers for tinned or cooked frozen sweetcorn or serve with no veg and instead add a veg they will eat on the side. Can add pepperoni.
STORAGE
Store leftovers in the fridge and reheat in the oven on a tray or sheet-pan preheated to 200ºc/180ºc fan/400ºf/gas 6 for just 5 minutes.
