FAQ's For My BBQ Pitta Pizza's
Only a few! One of the great things about this recipe.
- Pitta bread. This family recipe is based on serving 4 adults using 8 oval pitta breads that you commonly get in the UK. In the US larger circular pita breads are common, and you can still use 8 or go down to 7. If you stick with 8 you'll need more toppings.
- BBQ Sauce. Whichever bottle you have in the cupboard will work! The one we always have is Heinz Classic Barbecue Sauce.
- Peppers (sweet bell). Here I have used a mix of peppers, but you don't need to do that. You can just use one colour pepper. I would recommend sticking with either yellow, orange or green and avoid red because barbecue sauce is sweet and using less sweet peppers helps the balance that out.
- Onion. Either red or white onions will work! I've put 1-2 onions as it depends how much you want to put on. Thinly slice and try to keep the slices together when you lay them onto the pitta. You might think they will be overpowering but they really won't be, once grilled they are lovely and mild.
- Grated cheese. These days I prefer to buy a bag of grated mozzarella and cheddar mix, but I used to always make these with just plain cheddar. I would go for a mild cheddar ideally, if you only have medium or mature though, just add a lighter layer as you don't want the cheese to be overpowering.
Personally I would stick with onion and peppers as I know how well they work together, but below in my fussy eater section I do say tinned or cooked frozen sweetcorn can also work, albeit the pitta pizza's will overall be a little sweeter (because of the BBQ sauce too). My son prefers a salad veg on the side and to have just cheese or cheese and pepperoni on his.
There's not much prep to do with this recipe but you can certainly prep the veg earlier in the day, and if you are grating the cheese as opposed to buying it already grated, you can do that in advance too and store it all in the fridge in airtight containers until you are ready to make your pita pizzas.
This recipe is so easy to scale up and scale down in fact you don't even need to really look at the recipe quantities. Just use as many pitta bread's as you need, add the barbecue sauce add as much cheese you need and vegetables. If you are making these to feed a crowd then just bear in mind they go under the grill/broiler, so you'll need to grill them in several batches. It's also easy to make these just for one person! I sometimes make these just for myself for lunch when I'm at home working and the kids are at school.
You can store BBQ Pitta Pizza's leftovers in an air-tight container or food bag in the fridge for up to 3 days (cook day + 2). Then reheat them in the oven on a baking tray or sheet-pan preheated to 200ºc/180ºc fan/400ºf/gas 6 for just 5 minutes.

Keeping Fussy Eaters Happy
If you have a picky eater who won't eat vegetables on their pizza's usually, you could do them a plain one and one with veg on and offer both. You could sub the onions or peppers for tinned or cooked sweetcorn if they would prefer that. My fussy eater loves pepperoni so I put 3 pieces of pepperoni on his and salad veg on the side.

Making My BBQ Pitta Pizzas Suitable for Baby Weaning
Because of using store-bought BBQ sauce, I recommend sharing these Pitta Pizzas with little ones over 12 months. If you make your own barbecue sauce with no nasties, then this recipe can be suitable for 6 months +. Finely dice some of the sliced veg and add to their pitta. Once cooked, slice their pitta into finger-size strips.

BBQ Pitta Pizzas
Ingredients
- 8 pitta breads, 7 if large round pita's
- 65 g BBQ sauce, I use Heinz Classic
- 1 large pepper (bell), yellow, orange or green or mix of thinly sliced, then cut in half
- 1 - 2 red or white onions, thinly sliced
- 180 g grated mozzarella & cheddar mix or mild cheddar
Instructions
- Preheat the grill or broiler on high. Toast the pitta's until just crispy (for me that's setting 2 ½). Then put the pitta breads on an extra large baking tray/sheet pan or two smaller ones.
- For each pitta, spread on an even layer of BBQ sauce using a silicone brush. Then add on a generous amount of the onion (don't need to separate the slices), followed by the peppers, in an even layer, not over crowding the toppings.
- Grill/broil on high for 2 - 5 minutes, keeping a close eye on the pitta's, until the cheese around the edges has gone deep golden. If using two trays, repeat with the second. Serve whole or cut in half or thirds.
