This is no ordinary Cod Fillet Burger, this fish has an extra crispy and flavourful cornflake crust. The cod fillets can be cooked in the air fryer or the oven and be ready in just 30 minutes.
Add the cornflakes to a resealable bag, close and smash with a meat mallet or rolling pin until in very small pieces.
Lightly beat the eggs in a shallow bowl. Add the flour, salt, black pepper, paprika and mixed herbs into another shallow bowl and stir together well to mix. Add the cornflakes to a third shallow bowl.
Pat the fish fillets dry with paper towel. Then in turn coat in the flour mix, then the egg and finally the cornflakes.
TO OVEN BAKE
Then transfer the fillets to a lined baking tray, leaving a gap between each piece. Spray oil all over the fillets, both sides. The more generous you are with the oil the more golden and crispy they will go. I spray the top and bottom of the fillets with about 4 sprays each and make sure the sides look coated in oil too. Transfer to the oven and bake for 12 minutes, until golden and cooked through.
TO AIR FRY
Spray the fillets generously both sides with oil. Air fry on crisper plate with a little gap in between each fillet for 6 mins at 200ºc/400ºc. Turn carefully with tongs and cook for further 4-5 minutes until cooked through.
You’re ready to compile your burger and enjoy!
Notes
If eating with younger kids use ¼ teaspoon salt.
Kids especially will probably prefer ketchup in their burger.
GO GLUTEN-FREE swap the flour for cornflour and use gluten-free brioche buns.
Baby & Toddler
Suitable for 12 months+
Coat their cod fillet before adding in any salt to the flour mixture. Then add in the salt and mix again before coating everyone else’s.
Once cooked, use a fork to flake down their cod fillet well, removing some of the crispy coating too if you like for younger babies.
STORAGE
You can store any cooked Cod Fillet Burger leftovers in an air-tight container or resealable food bag in the fridge for up to 3 days (cook day + 2). Cooked leftovers can also be frozen, just defrost for 24 hours in the fridge and reheat in the air fryer or oven. Reheat at the same temp for half the time, then see if they are steaming hot all the way through.
