These cornflake coated fillets are so quick and easy to make, you’ll be eating in under 30 minutes. Plus, they can be cooked in the air fryer or the oven.

The Stars of my Cod Fillet Burger
The Cod
I always use frozen cod fillets for burgers. They are cheaper bought this way and they are usually pre-cut to a smaller size, perfect for burgers. They will need to be defrosted for 24 hours in the fridge before cooking. And don’t forget to pat them dry with paper towel before dipping and coating.
The Cornflakes
You can use Kellogg’s or supermarket own brand, it really doesn’t matter! You’ll need to make sure you smash them up well so they are in very small pieces, but you don’t want a flour like powder.
The Bun
I always use brioche rolls for homemade burgers, sometimes I toast them first and sometimes I don’t. You can use regular burger buns if you prefer.
Build Your Own Cod Fillet Burger
You may already have favourite fish burger add-ins and they will 100% go great with these cornflake crusted fillets. If you are unsure of what to add in or fancy a change here are my recommendations based on how my family like ours:
- Homemade sriracha mayo (deets in the recipe), lettuce and burger cheese (we like mature cheese slices)
- Tartare sauce, burger cheese and lettuce - real Filet-o-Fish style
- Simply burger cheese and ketchup - the kids favourite, of course!
Pro Cook Tips
Before you oven bake or air fry these cod fillets, if you want them to be the crispiest and the most golden they can be - be generous with the oil spray. I use a sunflower oil spray and do about 4 sprays front and back of the cod fillets. I then check the side of the fillets and spray anywhere there that looks like it needs it.

Can I prepare these Cod Fillets in advance?
It’s best to cook these cod fillets as soon as you’ve coated them for maximum crispiness. You can prepare the 3 bowls for dipping and coating though in advance. You can crush up your cornflakes, make up your flour mix and cover the bowl with clingfilm, leaving it at room temperature until ready to use. If you beat your eggs in advance, those will need to be refrigerated.
Can I feed more people with this recipe?
This is actually a great recipe for feeding a crowd, especially if you are oven baking them, you could make dozens!
How can younger children help make it?
So long as they wash their hands for 20 seconds before and after, kids will find coating these cod fillets a fun and different experience.
Can I Store Cod Fillet leftovers?
You can store any cooked Cod Fillet leftovers in an air-tight container or resealable food bag in the fridge for up to 3 days (cook day + 2). Leftover cooked fillets can also be frozen, just defrost for 24 hours in the fridge and reheat in the air fryer or oven. Reheat at the same temperature for half the time, then see if they are steaming hot all the way through.

My Cod Fillet Burgers are diary and nut-free. You can make the cod fillets gluten-free by using cornflour (or cornstarch) instead of flour and serving them in gluten-free brioche rolls.
How can I make these burgers more sustainable?
Cod in the UK is usually wild-caught as opposed to farmed, and can be prone to over-fishing. If you’d like a more sustainable option, go for frozen hake instead of cod.

Making My Cod Fillet Burger Suitable for Baby Weaning
If you are sharing with a baby I recommend coating their fillet before adding in any salt to the flour mixture. Then add in the salt and mix again before coating everyone else’s cod.
How to Serve to Babies & Toddlers
Use a fork to flake down their cod fillet well. You can remove some of the crispy coating too if you like for younger babies.

Cod Fillet Burger (with Cornflake Crust)
Ingredients
- 4 boneless, skinless cod fillets, defrosted
- 65 g plain flour
- 2 eggs
- 100 g cornflakes
- 2 teaspoons mixed herbs
- ½ tablespoon paprika
- ¼ - ½ teaspoon salt see notes if sharing with baby
- 10 grounds black pepper
- Sunflower or rapeseed spray oil
- 4 brioche buns or regular buns
BURGER SAUCE (optional)
- 120 g mayonnaise
- 1 tablespoon sriracha
OTHER BURGER ADD-INS (optional)
- Burger cheese I use mature cheddar slices
- Lettuce
Instructions
- Add the cornflakes to a resealable bag, close and smash with a meat mallet or rolling pin until in very small pieces.
- Lightly beat the eggs in a shallow bowl. Add the flour, salt, black pepper, paprika and mixed herbs into another shallow bowl and stir together well to mix. Add the cornflakes to a third shallow bowl.
- Pat the fish fillets dry with paper towel. Then in turn coat in the flour mix, then the egg and finally the cornflakes.
TO OVEN BAKE
- Then transfer the fillets to a lined baking tray, leaving a gap between each piece. Spray oil all over the fillets, both sides. The more generous you are with the oil the more golden and crispy they will go. I spray the top and bottom of the fillets with about 4 sprays each and make sure the sides look coated in oil too. Transfer to the oven and bake for 12 minutes, until golden and cooked through.
TO AIR FRY
- Spray the fillets generously both sides with oil. Air fry on crisper plate with a little gap in between each fillet for 6 mins at 200ºc/400ºc. Turn carefully with tongs and cook for further 4-5 minutes until cooked through.
You’re ready to compile your burger and enjoy!
Notes
- If eating with younger kids use ¼ teaspoon salt.
- Kids especially will probably prefer ketchup in their burger.
- GO GLUTEN-FREE swap the flour for cornflour and use gluten-free brioche buns.

Baby & Toddler
