    This Chicken and Sweetcorn Sandwich Filler takes the classic combination you know and love and gives it an upgrade. Tender chicken, sweet bursts of corn and crisp celery are mixed into a creamy mayo dressing, while a touch of garlic and onion powder adds extra savoury flavour without overpowering the filling. Honestly, once you try making your chicken and sweetcorn sandwich filling this way, they'll be no looking back!

    One of the best things about this recipe is how simple it is to make. It comes together in just a few minutes and makes enough to generously serve four people, making it ideal for family lunches, meal prep or easy packed lunches throughout the week. If you're only making it for yourself, you'll also find handy instructions in the recipe notes for making a single serving.

    This is a recipe the whole family can enjoy, and it's been thoroughly child-approved in our house. Even weaning babies can join in too - simply blend their portion to a smoother consistency and spread it onto soft bread or lightly toasted bread for an easy, flavourful lunch that everyone can share.

    FAQ's For My Chicken and Sweetcorn Sandwich filler

    What Ingredients do I need?

    The recipe quantities are based on a family of 4 to 5. If you would like a single serving or two serve two people, please see the recipe notes where I have given a single serving quantities. To feed two people just double those.
    Chicken. You'll need the equivalent of 200g/7oz or around two cooked and cold chicken breasts, or thighs if you already have that in the fridge or freezer.
    Sweetcorn. If you're in the UK you'll be able to use a 198g tin of sweetcorn or 6oz drained weight of a larger can of sweetcorn in the US. Otherwise, you can cook and cool 165g / 6oz of frozen sweetcorn.
    Celery. You'll need just 2 sticks of celery if you're feeding a family of 4-5. And trust me, you don't want to skip this! It gives the traditional filling freshness and crunch.
    Mayonnaise. This is a mayo based sandwich filler, you can opt for lighter mayo if you prefer.
    Seasonings. Aside from salt and pepper, you can choose to add more, optional seasonings; if you have them already either a little Season-All or a pinch of garlic powder and onion powder.     Can I make it without the seasonings?

    If you don't already have them, I wouldn't recommend buying them just for this recipe. I originally made this filling without them myself, just adding salt and pepper, it's just more recently I started adding the garlic and onion powder or Season-All.

    What bread should I use?

    Honestly, any type you like, from your regular sandwich bread to crusty baguette, it will pretty much shine on anything! Sometimes I actually just pile it on sliced baguette in more of an open-sandwich style too - yum!

    How long can I store this Chicken & Sweetcorn Sandwich Filler?

    This filling once made will be good for 2 days in the fridge in an air-tight food container (make day + 1).

    What diets is this sandwich filling suitable for?

    If you are gluten-free, you can enjoy this sandwich filler with gluten-free bread. It is also suitable for those with a diary or nut allergy. It is NOT suitable for those with an egg allergy, vegans or vegetarians.

    This Chicken and Sweetcorn Sandwich filler is suitable for weaning babies over 6 months old, so long as you remove their serving before you add the salt.

    How to Serve

    6 months +

    For under 12 months, blend into a thick puree using a stick blender and spread on their bread or toast.

    12 months +

    Serve as is in a sandwich or alongside slices of bread.

    • 2 cooked chicken breasts (or 200g/7oz cooked cold chicken), diced
    • 2 celery sticks, cut in half lengthways + thinly sliced
    • 198 g canned sweetcorn, drained (or 165g/6oz cooked cold frozen corn)
    • 180 g mayonnaise
    • Big pinch each of garlic powder + onion powder OR ½ teaspoon Season All, optional
    • Salt & black pepper to taste
    • Buttered baguettes or bread of choice

    • Combine all ingredients in a large bowl and toss until well combined. Serve immediately with bread or chill until ready to eat. This filling will keep for 2 days (make day +1) in an air-tight container in the fridge.
