These After Eight cookies are perfect for the festive season! I don't know about you, but we always have After Eight mints at Christmas, so these cookies feel really festive to us. They're a lovely way to use everyone's favourite mint chocolates in something a little different. With a soft, doughy chocolate cookie base reminiscent of brownies, topped with a layer of gooey melted After Eight mint chocolate. Of course, you don't have to save them for Christmas, as After Eights are available all year round!

After Eight Cookies - easy mint chocolate cookie recipe

The best thing about these cookies is how easy they are to make. The dough takes just 10 minutes to prepare, 30 minutes to chill and they bake in only 8-9 minutes, making them a brilliant treat when you fancy something homemade without spending ages in the kitchen. The kids love them too, so they are a regular bake in our house during the festive period especially.

And sorry, not sorry, but these cookies are going to be a little messy to eat when they're warm! They're so soft, doughy and gooey that they won't necessarily hold together, but honestly, that's all part of the joy of them. Embrace the mess and enjoy every bite! For the cookies you can't eat while still warm from the oven, a quick blast in the microwave brings them back to that lovely ooey-gooey texture. They're also great for making ahead and freezing for another time.

    Why You'll Love This Recipe

    • Perfect for Christmas - If you love After Eight mints over the festive season, these cookies are a fun way to enjoy them in a different form.
    • Quick and easy to make - You only need 10 minutes of prep time (and 30 mins chill time), and the cookies bake in just 8-9 minutes.
    • Soft, doughy and gooey - Enjoy them warm for soft cookie centres and melted chocolate. Once cooled, microwave them 15-20 seconds to get that freshly baked texture and melted After Eight back.
    • A hit with the kids - These chocolate mint cookies are a lovely homemade treat for the whole family.
    • They last longer - as you'll microwave and eat these warm, you can still enjoy them even once they may seem a little stale.
    • No fancy ingredients or equipment - Just everyday baking ingredients, an electric whisk and a baking tray.

A Few Tips for the Best After Eight Cookies

    1. Don't skip chilling the dough. It supports a good cookie shape, otherwise you'll end up with very flat cookies once baked.
    2. Leave space between the cookies. They spread as they bake, so I like to bake around five per tray.
    3. Take them out while they're still soft. The tops should no longer look wet, but the cookies shouldn't feel firm when they first come out of the oven. Really you want to take them out as soon as the tops have set, around 8-9 minutes.
    4. Leave lower trays in longer. As you will need to bake these cookies across 2-3 trays, the top tray will be baked first so don't just whip all the trays out - take the top one out when done and set a timer for one more minute for the rest. The 3rd tray may even need one further minute to bake.
    5. Pop the cookies back in the oven to melt the After Eights. Once you remove your cookies from the oven, turn it off and close the door. Then pop the After Eights mints on, and pop back into the oven and close the door for one minute to help them melt.
    6. Let them set before moving them. Leave the cookies on the tray for around 15-20 minutes so they can firm up before handling or transferring to a wire rack.
    7. Warm leftovers before eating. A quick 15-20 seconds (based on one cookie) in the microwave brings back that lovely gooey chocolate texture. Once the After Eights looks melted again they should be good to eat.

FAQs for my After 8 Cookies

What Ingredients Do I Need to Make After Eight Cookies?

Unsalted butter - Use softened butter so it creams easily with the sugar. If you only have salted butter, you can use it instead and leave out the extra salt. However, they will still be saltier than usual.
Dark brown sugar - This adds sweetness, a lovely caramel-like flavour and helps keep the cookies soft and chewy. You can use light brown sugar if that's what you have, although the flavour and colour will be slightly different.
A large egg - The egg binds the ingredients together and helps give the cookies their soft texture. I recommend using a large egg at room temperature.
Vanilla essence - A little vanilla adds warmth and complements the chocolate flavour. Vanilla extract works just as well.
Self-raising flour - This gives the cookies their structure and helps them rise slightly. I haven't tested it - but if you only have plain flour, using 190g plain flour with a teaspoon of baking powder should be fine.
Cocoa powder - Use unsweetened cocoa powder to give the cookies their rich chocolate flavour. This is different from drinking chocolate, which usually contains added sugar and other ingredients.
Salt - A large pinch helps balance the sweetness and brings out the chocolate flavour. You can leave it out if you prefer.
After Eight chocolates - You'll need 11-12 After Eight mints, one for each cookie. These provide the lovely mint chocolate topping. You could experiment with another mint fondant chocolate, but the flavour and texture may vary.

Why Do I Need to Chill the Cookie Dough?

Chilling the dough for 30 minutes helps firm up the butter, making the dough easier to handle and helping the cookies hold their shape as they bake. Otherwise your cookies will bake pretty flat. It also gives the flour time to absorb some of the moisture, which can improve the texture.

For cookies with the thickest middle as possible, it's better to chill the dough once you've scooped it onto the trays - but this will be dependant on whether you have the space to do so in your fridge. If you aren't able to do this, stick to chilling the dough in the bowl as per the recipe.

I know it's tempting to skip this step when you want cookies quickly, but I recommend chilling the dough for a thicker cookie.

How Do I Know When the Cookies Are Baked?

The cookies should take around 8-9 minutes in a preheated oven at 180°C/160°C fan/350°F/gas mark 4. They're ready when the tops have just set, and no longer look wet.

They may still feel very soft when you remove them from the oven, but that's exactly what you want for a lovely gooey centre. They'll continue to firm up as they cool.

Why Do I Add the After Eight Chocolates After Baking?

Adding the After Eight chocolates straight after baking allows them to melt gently on the hot cookies without spending too long in the oven. This gives you that lovely chocolate topping with the mint fondant layer melted into the cookie. It's also much easier than trying to bake the chocolates into the dough.

Can I Make These Cookies Without an Electric Whisk?

Yes! An electric whisk makes creaming the butter and sugar easier, but you can use a wooden spoon instead. Make sure your butter is properly softened so you can beat it together with the sugar until creamy.

You can then mix in the egg and vanilla before adding the dry ingredients. Just take care not to overwork the dough once you add the flour.

Can I Make the Cookie Dough Ahead of Time?

Yes, you can prepare the cookie dough ahead of time. After mixing the ingredients, cover the bowl and keep it in the fridge until you're ready to bake.

The dough may become quite firm after chilling for longer than 30 minutes, so leave it at room temperature briefly until it's softer to scoop. I recommend baking the cookies when you want to serve them for the best warm, gooey texture.

Why Are My After Eight Cookies Falling Apart?

If you're eating them warm, this is completely normal! These cookies are meant to be soft and doughy in the middle, and so when warm and with melted chocolate on top, they won't hold their shape. They'll be firm when cooled, but honestly, we think they're at their best when they're warm, gooey and falling apart. So embrace the mess, grab a napkin and enjoy!

Can I Freeze After Eight Cookies?

Yes, these cookies are freezable, making them great for preparing ahead of Christmas or keeping a batch ready for whenever a chocolate craving strikes.

Allow the baked cookies to cool completely, then freeze them in a suitable airtight container, separating the layers with baking paper if needed. Defrost them before reheating, then microwave briefly (use 15-20 seconds for one cookie as a basis) until the chocolate is melty again.

You can also freeze portions of the unbaked cookie dough. Shape the dough into balls and freeze them in a suitable container. Defrost in the fridge before baking, then follow the recipe as usual.

How Should I Store After Eight Cookies?

Once the cookies have cooled completely, transfer them to an airtight tin or container. Keep them at room temperature in a cool, dry place for up to a week.

If you stack the cookies, place baking paper between the layers to help prevent the chocolate topping from sticking to the cookies above.
For the best texture, I recommend warming them briefly in the microwave before serving, until the chocolate has melted, especially if you love that freshly baked, gooey centre.

Why are their white dots on the After Eight chocolates on the leftover cookies?

That may happen to the chocolate on top of the cookies after the first day or two. It's just where you've melted the chocolate then it's re-hardened and set. They are still good to eat, and will disappear once you reheat them in the microwave.

How Do I Reheat After Eight Cookies?

These cookies are at their best when soft, warm and melty, so reheating leftovers in the microwave is well worth doing.

How long to microwave them for will depend on your microwave and how many cookies you are reheating at once. I reheat single cookies for 15-20 seconds, so you can use that as a starting point. Once the After Eight mint looks melted, it should be fine, but you can check the cookie texture (you want it to be soft) and heat for a few more seconds if needed.

Microwaves vary, so start with a shorter time if yours is particularly powerful. The chocolate can get very hot, so allow the cookie to stand briefly before eating.

Do I Have to Serve These After Eight Cookies Warm?

You don't HAVE to but I definitely recommend you do! The joy of these cookies is the soft and gooey dough, and the melty After Eight chocolate topping. Enjoy them straight from the oven - after allowing them to firm up for around 15-20 minutes or give a cooled set cookie a quick blast in the microwave.

Can I Make Smaller or Larger Cookies?

It should be fine to very it a little, but this is untested and you will need to adjust the baking time.

I make 11-12 cookies using walnut-sized balls of dough, I actually use a small ice cream scoop for consistency. If you make smaller cookies, check them a little earlier. Larger cookies may need extra minutes in the oven.

Try to keep the cookies a similar size so they bake evenly.

Are After Eight Cookies Suitable for Different Diets and Allergies?

These cookies are vegetarian-friendly when made with suitable ingredients, but they aren't suitable for every diet or allergy.
Vegetarian - Generally suitable, but check the ingredient labels on your After Eight chocolates and other ingredients to confirm.
Nut-free - The recipe doesn't call for nuts, but check the packaging of all ingredients for allergen information and possible cross-contamination warnings, particularly if baking for someone with a nut allergy.

These After Eight Cookies are NOT suitable for vegans, those on a dairy, egg or gluten-free diets.

Always check the packaging for the latest allergen information, particularly if you're baking for someone with an allergy or intolerance.

    Ingredients

    • 125 g unsalted butter, softened
    • 160 g dark brown sugar
    • 1 large egg
    • ½ teaspoon vanilla essence

    • 30 g cocoa powder
    • Large pinch salt
    • 11-12 After Eight chocolates
Prevent your screen from going dark

    Instructions

    • Preheat the oven to 180ºc/160ºc fan/350ºf/gas 4. Line 2-3 baking trays/sheets with baking paper.
    • Beat the butter and sugar together with an electric whisk on medium until creamy, then add in the egg and vanilla and beat again well.
    • Add in the flour, cocoa and salt and beat on the lowest speed, until a dough has formed. Chill for 30 mins (see notes).
    • Use a small ice cream scoop or roll the dough into walnut-size balls and add to your baking trays/sheets, leaving space around each one to spread - I like to do 5 per tray.
    • Transfer to the oven and bake for 8-9 minutes or just until the top no longer looks wet (top shelf around 8 mins, lower shelves will take around 9 mins). Turn the oven off.
    • As soon as the trays come out the oven, top each cookie with one After Eight chocolate. Then pop the trays back in the oven for one minute to melt.
    • Leave to set for around 15-20 minutes, and enjoy or leave to cool completely for storage. These cookies will be soft and gooey and may fall apart easily when warm, don't be put off by that they are delicious this way! You can keep them in an air tight tin or container for up to a week - microwave briefly (for 1 cookie 15-20 seconds) before serving as they are best this way!

    Notes

If you have space to fit three baking trays in your fridge, I would recommend instead of chilling the dough in the bowl, scoop the batter, add to your trays and then chill for 30 minutes on the trays. This will result in a thicker cookie.
