Why not use fresh strawberries?
Using freeze-dried strawberries instead of fresh helps to keep the custard its thick, velvety consistency. Using fresh strawberries will add a watery element to the ice lollies which doesn’t quite work with the custard.
Where can I find freeze-dried strawberries?
Most supermarkets stock freeze-dried strawberries these days. I get mine from Sainsbury’s they come in a little pot, in the cake decorating section. You may find freeze-dried strawberry crisps instead in the dried fruit section. You can use these too, just they will be more like slices of strawberries instead of tiny pieces. If you like, you can pulse them in a mini-food chopper until they are in small pieces.
Can I make my own custard instead?
You can of course make your own custard instead of buying vanilla custard, adding in some vanilla essence if you prefer. Start with ½ teaspoon of vanilla essence and taste. If the vanilla isn’t really coming through, add another ½ teaspoon.
Can I use shop-bought plain custard for these lollies?

Strawberry and Custard Ice Lollies
Equipment
- Mixing bowl + spoon
- Lolly moulds + sticks
Ingredients
- 500 g pot fresh vanilla custard see note 1
- 6 g freeze-dried strawberries see note 2
Instructions
- Simply add the custard to a mixing bowl and stir through the freeze-dried strawberries.
- Fill your ice lolly or popsicle mould with the mixture. Add your lolly sticks in and freeze for at least 7 hours.
